Slow dough, small batches

Our sourdough rests for thirty-six hours before it meets the oven. Our butter is cultured, our flour is stone-milled, and our pastries are laminated by hand every morning.

At three o'clock the counter turns into a tea service: tiered stands, warm scones, and a menu of loose-leaf teas brewed the patient way.
